My voyage to becoming a healthy cook...

It aint' over til' the fat lady sings....or dies, I keep telling myself.  I implore Lo to say out loud, "Do I love my woman more than this potato chip?", every time he feels tempted to eat something he knows is high in sodium.  I've decided that if it is 150 mg. or less, it is safe to eat.  If it hovers in the 200's, then make sure it's below 240, otherwise, it will have an impact on our body.

The third day after being "salt" free Lo and I stepped on the scale.  He was elated to see he had lost 10 pounds of water and I 4 pounds.  I hugged him and jumped up and down and encouraged him to be proud of the sacrifices he has been making.  What did he do?  He ate a hot dog, bread and chips while I was out shopping.  The next day, he had gained 7 pounds of water back.  Now certainly, this has a lot to do with his Congestive Heart Failure, but the scary thing lies within the fact that a hot dog and chips can cause a person to produce that much liquid.  Salt I am finding is like a sponge that soaks up all the fluid in your body, forcing you to replenish it and thereby tricking your body into thinking that it doesn't have enough.  For someone like Lo, his disease stores it in and around his lung.  For someone like me, I store it in my hands, legs and especially feet.

After my Oscar worthy melt down admonishing Lo of his ill ways, he watched his food intake on day four and lost four pounds over night.  I have noticed that since I have cut the sodium intake in my own diet, my ankles can actually be seen and the heaviness and water weight that I have experienced most of my heavy adult life has dissipated quite a bit.  I am elated but also fearful of eating anything outside of my own home.
